Remember
that! If you do then you're doing better than the unbelievable number of
operators who will go out of business this year because they didn't! This is
the only business I know where there are more ways to LOSE money than there
are to MAKE it!

Playbook is about two things and two things only. Planning and Systems.
All the best systems in the world can't get you success if you don't have a
plan on how you're gong to use them. Likewise, the best laid plans in the
world won't work if you don't have great systems to execute them.
Do you
have a Business Plan? Marketing Plan? Profitability Plan? A Fun Plan? If
not, then I don't know how you will ever have success? The days of "if you
build it, they will come" are over! Successful restaurants are planned to
have success and also include the necessary designed systems to execute the
plan. Shooting from the hip or running around putting out fires isn't a
plan. Nor is it a system! But it's the basis of thinking for most managers
who will tell you to your face, that a shift is nothing more than controlled
chaos!
Let's
understand each other when it comes to cost control too while we're at it.
No one ever shrank their way to greatness! Cost control isn't about
sacrifice, it's about the smart distribution of resources in order to
accomplish the overall business plan. Cutting off your nose to spite your
face will only get you so far. If you do not have a plan for driving sales
consistently, while allocating your resources in order to support that
growth, you will not play the game long!
Every line
item on your P&L needs a plan in place to have it contribute to your overall
success. I'm not just consulting about keeping the costs as low as possible
- although that seems to be the way most operators act! But rather a
proactive approach to everything from Food Cost to an Energy Plan for
aggressively attacking ever rising utility bills! Be reactive in any area
today and you are asking for trouble!

Playbooks should consist of a Business Plan and a Marketing Plan, with
sufficient support planning for Staffing, Food Cost/Menu, Beverage
Cost/Menu, Controllable Expenses, Utilities, Sanitation/Cleanliness,
Service, Building and Grounds, Equipment/PM, etc... Are you getting my

The next
step after you have prepared a plan for each area in your restaurant, is to
examine the systems that make it work! Systems are the designed ways in
which you leverage your resources to succeed in achieving your business
